This soup is good. Really good. We're taking 'eating-it-straight-from-the-pot-on-the-stove-because-I've-already-had-two-bowls-and-I-really-don't-need-a-third-but-just-a-few-more-bites-won't-hurt' good. Besides the fact that the flavor is dead on, there is huge appeal in a recipe that calls for throwing everything in a pot and leaving it alone for a few hours (it's actually a crockpot recipe).
I improvised a little because I just can't leave well enough alone, but the base of the recipe is great. I added diced zuccini, a few handfuls of rice (it'll cook in the broth) and used bone-in chicken thighs instead of bonesless, skinless breasts (thighs are cheaper and have mega flavor). I would also recommend adding the juice of a few limes - this definitely needs some acid, and the lime is perfect.
